Unicamp Kitchen Manager


The Kitchen Manager will embody the ideals and spirit of Unicamp. She/he is responsible for supervising the Assistant Cook and Operations Crew assigned to the kitchen and dining hall. She/he will work with the Program Director surrounding any programs that require special food preparation, the Admin Manager for meal numbers and specifications, and the Director to review menu planning. A significant part of the job includes encouraging the development of staff skills, ordering and buying food and maintaining the safety and well-being of all campers in relation to food services.

Responsibilities include:

  • Facilitating staff development and accountability,
  • Working as a team member,
  • Ensuring Unicamp rules and policies are understood and followed,
  • Scheduling kitchen staff with the Head of Operations Crew and Camp Director,
  • Cooking and supervising meal service and kitchen, dining room, and pantry cleanliness,
  • Purchasing or assisting in the purchase of food and kitchen equipment/supplies,
  • Ensuring that appropriate and sufficient quantities of food are provided for the meal numbers provided by the Registrar in advance,
  • Assisting in the preparation of Performance Evaluations of staff under direct supervision,
  • Conducting pre- and post-season inventory,
  • Maintaining high health standards including: food temperature control, protection of food from contamination, employee hygiene and hand-washing, sanitation of food service area, storage and removal of waste, and pest control,
  • Preparing nutritious, economical and environmentally sensitive menus suitable for the different program and age groups. Vegetarian, vegan and omnivore options are to be regularly available and the kitchen and dining hall are peanut free. It is up to the Kitchen Manager to determine to what degree he/she will cater to more specific diets (ie: wheat free, nightshade allergies...)
  • Serving well-cooked meals, on-time with adequate portions for all guests,
  • Ordering any kitchen cleaning and other non-edible supplies, in consultation with the Assistant Director,
  • Purchasing fresh produce locally where possible, establishing contact with local produce growers and suppliers,
  • Training and supervising staff assigned to assist in the preparation and service of food,
  • Liasing and working closely with the Camp Director in all matters.

Preferred Qualifications:

  • Member of a Unitarian Universalist Congregation,
  • Experience cooking and coordinating meals for 20-100 people at camp, conference or other related areas,
  • Experience teaching/organizing volunteers in food-related work,
  • Experience cooking mixed meat/vegetarian/vegan menus, and other specific diets - wheat free, allergies, etc...
  • Experience cooking from scratch, using bulk items, dried goods...
  • Excellent interpersonal, communication, and conflict resolution skills,
  • Familiarity with Unicamp,
  • Previous camp, community, or conference centre experience,
  • Excellent organizational skills,
  • Access to a vehicle.

Conditions of employment and salary:

  • $500 per week X 9 weeks full-time, late June to Labour Day. Specific dates to be negotiated upon signing of contract.
  • Off season work to be negotiated on an individual basis,
  • Two days off per week, not during weekends,
  • Work week runs Sunday until Saturday, unless otherwise noted,
  • This position reports to the Camp Director.
